The independent brewery that produces only craft beer

The Birrificio del Monferrato produces only craft beer. For its preparation, in the facilities at our location, we use only the best raw materials by the method of thehigh fermentation, without filtration or pasteurization, which ensures the best taste together with the absolute authenticity.

The Monferrato Brewery is located in one of the oldest and largest winemaking facilities in Monferrato, the Ruby Cellar, established in 1953 and has now become a property of industrial archaeology.

The method: depending on the type of yeast the brewmaster has decided to use, two different categories of beer can result from the main fermentation: low and high fermentation. Fermentation takes place in the steel autoclaves that have replaced wooden barrels in small breweries, as in industrial breweries.

During the process of high fermentation, so called because the yeast rises high, afloat, in the tank, the physiological breed Saccharomyces Cerevisiae yeast is used, which is active at higher temperatures, 15 to 25 °C. Since fermentation processes are favored by heat, the action of the yeast in this case is very rapid. The resulting beers will have aromas and flavors particularly intense.
